Primal Energy Bar -- Phase 3

The original recipe for these bars are from Marks Daily Apple blog. http://www.marksdailyapple.com/primal-energy-bar-redux/. I modified it to make it phase 3 compliant. When you are in phase 4 it would be great to add in the dried fruit recommended on the original recipe. I made these bars today for my husband to take to Chicago next week so he will have a snack that he can take to his classes that is filled with fat and protein! My teen son who is in phase 3 had one and said they were DELICIOUS!!

Primal Energy Bars
1/2 cups sliced almonds (I only had whole so I coarsely chopped them in the food processor)
1/2 cup pecans coarsely chopped
1/4 cup unsweetened shredded coconut
1/4 cup almond butter
1/4 cup coconut oil
1/4 cup almond meal
1 1/2 tsp vanilla
1/2 tsp honey (can leave out if you are having trouble.. but honestly 1/2 tsp will not make or break your phase 3 day, it is less sugar than an apple has!)
1/2 cup protein powder (I used Vanilla)
1 egg
1/2 tsp salt
Additional coconut for topping.

Preheat oven to 325 degrees F.
1. In a pan melt the coconut oil. Add the almond butter and allow it to melt. Add the vanilla, honey, and salt.
2. In a bowl combine the nuts, almond meal, and protein powder.
3. Mix the egg into the nut mixture.
4. Poor the oil mixture over the nut mixture and mix well.
5. Grease a 7" X 5" or 8" X 5" loaf pan with coconut oil or butter. Spread the mixture into the greased pan.
6. Bake for 10 minutes. Remove from oven and sprinkle on additional coconut, press it down. Turn on the broiler and return pan to the oven until the coconut and top is toasted brown.
7. Allow to cool. Cut into 5-6 bars. Wrap in plastic or place in small snack baggies. Refrigerate until you need them. These can also be frozen until you need them.
